Yep…It’s as good as it looks!

After 2 months of ‘attempting’ to eat mostly veggies I’m adding some meat dishes into the mix. On days when I eat all veggies I’ve noticed that I get a craving for protein around 6pm or 7pm which usually ends up in me buying a hamburger or Hot Wings.  To prevent this I’m adding some meat dishes back into the fold.

Meatloaf is one of my favorite meat dishes and this version is made with ground turkey, spinach, and mushrooms with very little bread crumbs to reduce the carb load. You don’t have to use the McCormick packets but I happened to have two of them on hand that I needed to use.  Turkey is a bland meat that really needs seasoning the same with the veggies so what seems like a LOT of seasoning isn’t.  I also did not add any additional salt other than what was in the packets.

Main Ingredients

2 lbs Ground Turkey
1 pkg Frozen Chopped Spinach
1 pkg Frozen Onion, Bell Pepper, & Celery Blend
2 tbsp Olive Oil
1 cup Chopped Fresh Mushrooms
½ cup Italian Bread Crumbs
2 Eggs

Seasoning

1+½ pkg McCormick Meatloaf Seasoning Packets
½ tsp Cumin
1 tsp Mrs. Dash Garlic & Herb Salt-Free Seasoning
1 tbsp Minced Garlic

Topping Sauce

I prefer K.C. Masterpiece BBQ Sauce alone or 1/3 BBQ Sauce mixed with 1/3 Ketchup + 1/3 Tomato Paste

How to Make

  1. Preheat your oven at 350 degrees
  2. In a sauté pan, heat frozen veggies until they are unthawed and all the melted water has evaporated out – about 5 to 7 minutes
  3. In a bowl combine the veggies with the remaining ingredients
  4. Mix will to incorporate seasonings and bread crumbs
  5. Put mixture into a baking sheet or loaf pan
  6. Pour your favorite topping sauce on top and spread to cover the loaf
  7. Bake for about 45 to 1 hour
  8. Remove from the oven. Let Cool and Enjoy!
